Classic Tiramisu
Ingredients:
- 6 egg yolks
- 3/4 cup granulated sugar
- 1 cup mascarpone cheese
- 1 1/2 cups strong coffee, cooled
- 2 packs ladyfingers
- Unsweetened cocoa powder for dusting
Instructions:
- Prepare the Coffee: Brew the coffee and allow it to cool.
- Mix Yolks and Sugar: Whisk egg yolks and sugar until creamy and thick.
- Add Mascarpone: Fold mascarpone into the yolk mixture until smooth.
- Assemble: Dip ladyfingers briefly in coffee and lay them in a dish. Spread a layer of the mascarpone mixture over the ladyfingers. Repeat layers.
- Chill and Serve: Dust with cocoa powder and chill for at least 4 hours before serving.
2. Vanilla Bean Panna Cotta
Ingredients:
- 2 cups heavy cream
- 1 vanilla bean, split lengthwise
- 1/2 cup sugar
- 2 1/4 teaspoons gelatin, sprinkled over 3 tablespoons cold water
Instructions:
- Heat Cream and Vanilla: Combine cream, sugar, and vanilla bean in a saucepan. Gently bring to a simmer then remove from heat.
- Dissolve Gelatin: Add the softened gelatin to the hot cream, stirring until dissolved.
- Set: Pour into glasses and refrigerate until set, about 4 hours.
- Serve: Remove the vanilla bean and serve chilled.
3. Chocolate Mousse
Ingredients:
- 200g dark chocolate, chopped
- 3 eggs, separated
- 1/4 cup sugar
- 1 cup heavy cream
Instructions:
- Melt Chocolate: Melt chocolate and let it cool slightly.
- Whisk Egg Yolks: Whisk yolks and sugar until thick. Fold into the chocolate.
- Whip Cream: In another bowl, whip cream to soft peaks. Fold into the chocolate mixture.
- Whip Whites: Beat egg whites to stiff peaks and fold into the mixture gently.
- Chill and Serve: Spoon into cups and chill for at least 2 hours.
