Ingredients

  • 4-5 medium potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups (1 liter) chicken or vegetable broth
  • 1 cup (240 ml) milk or cream (for extra creaminess)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, chopped green onions, crumbled bacon

Instructions

  1. Prepare the Potatoes:
    • In a large pot, add the diced potatoes and cover them with the broth. Bring to a boil over medium heat and cook until the potatoes are tender (about 10-15 minutes).
  2. Sauté the Aromatics:
    • In a separate pan, melt the butter over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Add the garlic and cook for another 1-2 minutes.
  3. Thicken the Soup:
    • Sprinkle the flour over the onions and garlic. Stir and cook for about 1 minute, allowing the flour to slightly brown.
    • Gradually add the milk or cream, stirring constantly to avoid lumps. Let this mixture simmer for a few minutes until it thickens.
  4. Combine and Simmer:
    • Pour the milk mixture into the pot with the potatoes and broth. Stir well to combine.
    • Simmer for another 5-10 minutes, allowing the flavors to meld together. You can mash some of the potatoes with a spoon or potato masher for a thicker consistency.
  5. Season and Serve:
    • Add salt and pepper to taste.
    • Ladle the soup into bowls and top with shredded cheese, green onions, or bacon bits if desired.

  • For Extra Flavor: Add a sprinkle of thyme or rosemary while cooking.
  • Blending Option: If you prefer a smoother soup, blend part of the soup or use an immersion blender to create a creamier texture.
