Creamy Potato Soup Recipe
Ingredients
- 4-5 medium potatoes, peeled and diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups (1 liter) chicken or vegetable broth
- 1 cup (240 ml) milk or cream (for extra creaminess)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- Salt and pepper, to taste
- Optional toppings: shredded cheese, chopped green onions, crumbled bacon
Instructions
- Prepare the Potatoes:
- In a large pot, add the diced potatoes and cover them with the broth. Bring to a boil over medium heat and cook until the potatoes are tender (about 10-15 minutes).
- Sauté the Aromatics:
- In a separate pan, melt the butter over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Add the garlic and cook for another 1-2 minutes.
- Thicken the Soup:
- Sprinkle the flour over the onions and garlic. Stir and cook for about 1 minute, allowing the flour to slightly brown.
- Gradually add the milk or cream, stirring constantly to avoid lumps. Let this mixture simmer for a few minutes until it thickens.
- Combine and Simmer:
- Pour the milk mixture into the pot with the potatoes and broth. Stir well to combine.
- Simmer for another 5-10 minutes, allowing the flavors to meld together. You can mash some of the potatoes with a spoon or potato masher for a thicker consistency.
- Season and Serve:
- Add salt and pepper to taste.
- Ladle the soup into bowls and top with shredded cheese, green onions, or bacon bits if desired.
