Soft and Buttery Powdered Sugar Cookies

Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar (plus extra for dusting)
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1/4 cup cornstarch
- 1/4 teaspoon salt
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter and sugar: In a large bowl, beat the softened butter and powdered sugar together until light and fluffy. Add in the vanilla extract and mix well.
- Mix the dry ingredients: In a separate bowl, whisk together the flour, cornstarch, and salt.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the butter mixture, mixing until just combined. The dough should be soft and slightly crumbly but come together when pressed.
- Form the cookies: Roll the dough into small balls (about 1 inch in diameter) and gently flatten each ball with your fingers or the bottom of a glass to form round cookies.
- Bake: Place the cookies on the prepared baking sheet and bake for 12-15 minutes, or until the edges just start to turn golden. The cookies should remain pale and soft.
- Cool and dust: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Once they are completely cool, dust them generously with powdered sugar.
