Italian Sausage and Pasta Soup Recipe

 

 

 

 

Ingredients:

  • 1 lb Italian sausage, casings removed
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup elbow macaroni or other small pasta
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish
  • Parmesan cheese, grated for serving

Instructions:

  1. Brown the Sausage:
    • In a large pot, cook the Italian sausage over medium heat, breaking it apart with a spoon, until browned and cooked through. Remove the sausage with a slotted spoon and set aside.
  2. Sauté Vegetables:
    • In the same pot, add a bit of oil if needed, then sauté the onions, carrots, and celery until softened, about 5 minutes. Add the garlic and sauté for another minute until fragrant.
  3. Simmer the Soup:
    • Return the sausage to the pot along with the chicken broth, diced tomatoes, oregano, basil, and red pepper flakes. Bring to a boil, then reduce heat and simmer for about 15 minutes to let the flavors meld.
  4. Cook the Pasta:
    • Add the pasta to the pot and cook according to package instructions until al dente, usually about 8-10 minutes.
  5. Season and Serve:
    • Season the soup with salt and pepper to taste. Serve hot, garnished with chopped fresh parsley and grated Parmesan cheese.
