Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 6 cups beef broth
  • 1 (28 oz) can crushed tomatoes
  • 2 tbsp tomato paste
  • 8 oz lasagna noodles, broken into pieces
  • 1/2 cup Parmesan cheese, grated
  • 1 cup ricotta cheese
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Fresh parsley or basil, for garnish

Instructions:

  1. Brown the Beef:
    • In a large pot, heat some olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat.
  2. Sauté Vegetables:
    • Add chopped onion to the pot with the beef and sauté until soft. Add garlic, basil, oregano, and red pepper flakes. Cook until fragrant, about 1 minute.
  3. Add Liquids:
    • Stir in crushed tomatoes, beef broth, and tomato paste. Bring to a boil, then reduce heat and simmer to blend the flavors, about 20 minutes.
  4. Cook Noodles:
    • Add broken lasagna noodles to the pot and cook until tender, about 10-12 minutes.
  5. Prepare Cheeses:
    • In a small bowl, mix ricotta with a little salt and pepper. Set aside.
  6. Serve:
    • Ladle the hot soup into bowls. Add a spoonful of ricotta mixture and sprinkle with Parmesan cheese. Garnish with fresh parsley or basil.
  7. Enjoy:
    • Serve your lasagna soup hot, with extra Parmesan on the side for those who want a cheesier experience.
