Lasagna Soup Recipe

Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional, for heat)
- 6 cups beef broth
- 1 (28 oz) can crushed tomatoes
- 2 tbsp tomato paste
- 8 oz lasagna noodles, broken into pieces
- 1/2 cup Parmesan cheese, grated
- 1 cup ricotta cheese
- Salt and pepper, to taste
- Olive oil, for cooking
- Fresh parsley or basil, for garnish
Instructions:
- Brown the Beef:
- In a large pot, heat some olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat.
- Sauté Vegetables:
- Add chopped onion to the pot with the beef and sauté until soft. Add garlic, basil, oregano, and red pepper flakes. Cook until fragrant, about 1 minute.
- Add Liquids:
- Stir in crushed tomatoes, beef broth, and tomato paste. Bring to a boil, then reduce heat and simmer to blend the flavors, about 20 minutes.
- Cook Noodles:
- Add broken lasagna noodles to the pot and cook until tender, about 10-12 minutes.
- Prepare Cheeses:
- In a small bowl, mix ricotta with a little salt and pepper. Set aside.
- Serve:
- Ladle the hot soup into bowls. Add a spoonful of ricotta mixture and sprinkle with Parmesan cheese. Garnish with fresh parsley or basil.
