- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 cups pineapple, cut into chunks
- 1/4 cup soy sauce

- 1 tablespoon vinegar (apple cider or white wine vinegar works well)
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated

Instructions:
- Prepare the Pork:
- Preheat your oven to 375 degrees F (190 degrees C).

- Cook with Pineapple:
- Lower the heat to medium and add the pineapple chunks around the pork in the skillet.
- Pour the sauce over the pork and pineapple.
- Oven Roast:
- Transfer the skillet to the preheated oven. Roast for 15-20 minutes, or until the pork reaches an internal temperature of 145 degrees F (63 degrees C).
- Rest and Serve:
- Remove the skillet from the oven and let the pork rest for a few minutes before slicing.
- Sprinkle with sesame seeds and fresh herbs before serving.
- Serve:
- Slice the pork and serve it with the caramelized pineapple and sauce from the skillet. Accompany with rice or a fresh salad for a complete meal.
