Sweet and Savory Pork Tenderloin with Caramelized Pineapple

Ingredients:

  • 1 pork tenderloin (about 1 to 1.5 pounds)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 cups pineapple, cut into chunks
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon vinegar (apple cider or white wine vinegar works well)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame seeds (optional, for garnish)
  • Fresh herbs (like cilantro or parsley, for garnish)

Instructions:

  1. Prepare the Pork:
    • Preheat your oven to 375 degrees F (190 degrees C).
    • Season the pork tenderloin generously with salt and pepper.
    • Heat olive oil in a large oven-proof skillet over medium-high heat. Sear the pork on all sides until golden brown, about 2-3 minutes per side.
  2. Make the Sauce:
    • In a bowl, mix together the soy sauce, honey, vinegar, minced garlic, and grated ginger.
  3. Cook with Pineapple:
    • Lower the heat to medium and add the pineapple chunks around the pork in the skillet.
    • Pour the sauce over the pork and pineapple.
  4. Oven Roast:
    • Transfer the skillet to the preheated oven. Roast for 15-20 minutes, or until the pork reaches an internal temperature of 145 degrees F (63 degrees C).
  5. Rest and Serve:
    • Remove the skillet from the oven and let the pork rest for a few minutes before slicing.
    • Sprinkle with sesame seeds and fresh herbs before serving.
  6. Serve:
    • Slice the pork and serve it with the caramelized pineapple and sauce from the skillet. Accompany with rice or a fresh salad for a complete meal.

This dish combines the savory flavor of pork with the sweetness of pineapple, creating a delicious and visually appealing meal. Enjoy your cooking!
