Carne Asada Tacos
Ingredients:
For the Carne Asada:

- 2 lbs flank or skirt steak
- 1/2 cup orange juice
- 1/4 cup lime juice
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 jalapeño, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
For the Tacos:
- Corn tortillas
- 1 white onion, finely chopped
- Fresh cilantro, chopped
- Lime wedges, for serving
- Salsa or hot sauce, for serving
Instructions:
- Marinate the Steak:
- In a bowl, whisk together orange juice, lime juice, olive oil, garlic, jalapeño, cumin, paprika, salt, and pepper.
- Place the steak in a large zip-top bag and pour the marinade over the steak. Seal the bag and ensure the steak is well-coated.
- Refrigerate for at least 2 hours, or overnight for best flavor.
- Grill the Steak:
- Preheat your grill to high heat.
- Remove the steak from the marinade and grill for about 5-7 minutes on each side, depending on thickness, until medium-rare or to your desired doneness.
- Let the steak rest for a few minutes, then slice against the grain into thin strips.
- Prepare the Tacos:
- Warm the corn tortillas on the grill or in a skillet.
- Assemble the tacos by placing a few slices of steak on each tortilla, followed by a sprinkle of chopped onion and cilantro.
- Serve with lime wedges and salsa or hot sauce on the side.
