- 2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground ginger
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 3/4 cup unsalted butter, softened
- 1 cup dark brown sugar, packed
- 1 large egg
- 1/4 cup molasses
- Granulated sugar, for rolling
Instructions:
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- Whisk together dry ingredients: In a medium bowl, combine flour, baking soda, salt, ginger, cinnamon, and cloves.
- Cream butter and sugar: In a large bowl, beat the butter and brown sugar together until light and fluffy. Add the egg and molasses, and beat until well combined.
- Combine with dry ingredients: Gradually add the dry ingredients to the butter mixture, mixing until just incorporated.
- Shape the cookies: Roll dough into balls about 1 inch in diameter. Roll each ball in granulated sugar to coat thoroughly. Place them on the prepared baking sheets, spaced about 2 inches apart.
- Bake: Bake in the preheated oven for 8-10 minutes, or until the edges are just set and the tops are cracked.
- Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
