Strawberry Cheesecake Doughnuts Recipe
Ingredients:
- For the Doughnuts:
- 1 cup milk, warmed
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1/4 cup granulated sugar, plus 1 tablespoon
- 2 tablespoons unsalted butter, melted
- 1 large egg
- 1/2 teaspoon salt
- 3 to 3 1/2 cups all-purpose flour
- Oil for frying
- For the Cheesecake Filling:
- 1 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- For the Strawberry Topping:
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup strawberry jam
- 1 tablespoon water
- For the Crumble:
- 1/2 cup graham cracker crumbs
- 2 tablespoons butter, melted
- 2 tablespoons brown sugar
- Additional:
- Fresh mint leaves, for garnish
Instructions:
- Prepare the Dough:
- In a large bowl, dissolve 1 tablespoon of sugar in warm milk and sprinkle yeast over the top. Let sit for 5-10 minutes until foamy.
- Mix in the melted butter, remaining sugar, egg, and salt. Gradually add flour until a soft dough forms. Knead until smooth and elastic, about 5-7 minutes.
- Place dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
- Make the Cheesecake Filling:
- Beat the cream cheese with powdered sugar and vanilla until smooth. Transfer to a piping bag and refrigerate.
- Prepare the Strawberry Topping:
- In a small saucepan, combine strawberry jam and water. Heat over medium until the mixture thins slightly. Add fresh strawberries and stir gently, just heating through. Set aside to cool.
- Make the Crumble:
- Mix graham cracker crumbs, melted butter, and brown sugar until well combined. Set aside.
- Fry the Doughnuts:
- Roll out the dough on a floured surface to about 1/2 inch thick. Cut out doughnut shapes using a doughnut cutter or large cookie cutter.
- Heat oil in a deep-fryer or large heavy-bottomed pot to 350°F (175°C).
- Fry doughnuts in batches, turning once, until golden brown on both sides. Remove and let drain on paper towels.
- Assemble the Doughnuts:
- Once cooled, use a small knife to make a hole in the side of each doughnut. Pipe the cheesecake filling into each doughnut.
- Top each doughnut with the strawberry topping and sprinkle with the graham cracker crumble.
- Garnish with a mint leaf.
