Strawberry Cheesecake Doughnuts Recipe

 

 

Ingredients:

  • For the Doughnuts:
    • 1 cup milk, warmed
    • 2 1/4 teaspoons active dry yeast (1 packet)
    • 1/4 cup granulated sugar, plus 1 tablespoon
    • 2 tablespoons unsalted butter, melted
    • 1 large egg
    • 1/2 teaspoon salt
    • 3 to 3 1/2 cups all-purpose flour
    • Oil for frying
  • For the Cheesecake Filling:
    • 1 cup cream cheese, softened
    • 1/4 cup powdered sugar
    • 1 teaspoon vanilla extract
  • For the Strawberry Topping:
    • 1 cup fresh strawberries, hulled and sliced
    • 1/2 cup strawberry jam
    • 1 tablespoon water
  • For the Crumble:
    • 1/2 cup graham cracker crumbs
    • 2 tablespoons butter, melted
    • 2 tablespoons brown sugar
  • Additional:
    • Fresh mint leaves, for garnish

Instructions:

  1. Prepare the Dough:
    • In a large bowl, dissolve 1 tablespoon of sugar in warm milk and sprinkle yeast over the top. Let sit for 5-10 minutes until foamy.
    • Mix in the melted butter, remaining sugar, egg, and salt. Gradually add flour until a soft dough forms. Knead until smooth and elastic, about 5-7 minutes.
    • Place dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
  2. Make the Cheesecake Filling:
    • Beat the cream cheese with powdered sugar and vanilla until smooth. Transfer to a piping bag and refrigerate.
  3. Prepare the Strawberry Topping:
    • In a small saucepan, combine strawberry jam and water. Heat over medium until the mixture thins slightly. Add fresh strawberries and stir gently, just heating through. Set aside to cool.
  4. Make the Crumble:
    • Mix graham cracker crumbs, melted butter, and brown sugar until well combined. Set aside.
  5. Fry the Doughnuts:
    • Roll out the dough on a floured surface to about 1/2 inch thick. Cut out doughnut shapes using a doughnut cutter or large cookie cutter.
    • Heat oil in a deep-fryer or large heavy-bottomed pot to 350°F (175°C).
    • Fry doughnuts in batches, turning once, until golden brown on both sides. Remove and let drain on paper towels.
  6. Assemble the Doughnuts:
    • Once cooled, use a small knife to make a hole in the side of each doughnut. Pipe the cheesecake filling into each doughnut.
    • Top each doughnut with the strawberry topping and sprinkle with the graham cracker crumble.
    • Garnish with a mint leaf.
