Jalapeño Popper Chicken Recipe
Ingredients:
- 4 chicken breasts, boneless and skinless
- 4 jalapeño peppers
- 1 cup cream cheese, softened
- 1 cup cheddar cheese, shredded
- 8 strips of bacon
- Salt and pepper, to taste
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- Olive oil
Instructions:
- Prepare the Chicken:
- Preheat your oven to 375°F (190°C).
- Flatten the chicken breasts to about ¼ inch thickness using a meat mallet.
- Prepare the Jalapeños:
- Slice the jalapeños in half lengthwise and remove the seeds if you prefer less heat.
- Make the Filling:
- In a bowl, mix together the cream cheese, cheddar cheese, garlic powder, and paprika.
- Assemble the Dish:
- Stuff each jalapeño half with the cheese mixture.
- Place a stuffed jalapeño half at one end of a flattened chicken breast, then roll the chicken around the jalapeño.
- Wrap each chicken roll with two strips of bacon. Secure with toothpicks if necessary.
- Cook the Chicken:
- Heat a large oven-proof skillet over medium heat. Add a little olive oil.
- Sear the bacon-wrapped chicken rolls on all sides until the bacon starts to render and becomes crispy.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked.
- Serve:
- Remove the toothpicks and serve hot. Garnish with additional chopped jalapeños or a drizzle of your favorite sauce if desired.
