Ingredients:

  • 4 chicken breasts, boneless and skinless
  • 4 jalapeño peppers
  • 1 cup cream cheese, softened
  • 1 cup cheddar cheese, shredded
  • 8 strips of bacon
  • Salt and pepper, to taste
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • Olive oil

Instructions:

  1. Prepare the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Flatten the chicken breasts to about ¼ inch thickness using a meat mallet.
  2. Prepare the Jalapeños:
    • Slice the jalapeños in half lengthwise and remove the seeds if you prefer less heat.
  3. Make the Filling:
    • In a bowl, mix together the cream cheese, cheddar cheese, garlic powder, and paprika.
  4. Assemble the Dish:
    • Stuff each jalapeño half with the cheese mixture.
    • Place a stuffed jalapeño half at one end of a flattened chicken breast, then roll the chicken around the jalapeño.
    • Wrap each chicken roll with two strips of bacon. Secure with toothpicks if necessary.
  5. Cook the Chicken:
    • Heat a large oven-proof skillet over medium heat. Add a little olive oil.
    • Sear the bacon-wrapped chicken rolls on all sides until the bacon starts to render and becomes crispy.
    • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked.
  6. Serve:
    • Remove the toothpicks and serve hot. Garnish with additional chopped jalapeños or a drizzle of your favorite sauce if desired.
