Ingredients:

  • 4 pork chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

For the BBQ Rub:

  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (adjust according to your heat preference)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Optional BBQ Sauce (for basting):

  • 1 cup barbecue sauce (your choice)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika

Instructions:

  1. Prepare the Pork Chops:
    • Pat the pork chops dry with paper towels.
    • Rub each chop with olive oil, salt, and pepper to help the seasoning stick.
  2. Make the BBQ Rub:
    • In a small bowl, combine brown sugar, papaprikas, garlic powder, onion powder, cayenne, salt, and black pepper.
    • Generously coat each pork chop with the BBQ rub on all sides.
  3. Preheat Your Grill:
    • Preheat your grill to medium-high heat.
    • If using a charcoal grill, allow the coals to reach a medium heat (you can hold your hand about 5 inches above the grill surface for 5-7 seconds).
  4. Grill the Pork Chops:
    • Place the pork chops on the grill and cook for about 7-8 minutes on each side, or until the internal temperature reaches 145°F (63°C).
    • If you’re basting with BBQ sauce, brush the chops with the sauce mixture during the last few minutes of grilling on each side to create a caramelized exterior.
  5. Rest and Serve:
    • Remove the pork chops from the grill and let them rest for 5 minutes to allow the juices to redistribute.
    • Serve hot, with extra BBQ sauce on the side if desired.
