Creme Brulee Donuts Recipe

 

 

**Ingredients:**

– 2 cups all-purpose flour
– 1/2 cup granulated sugar
– 1 packet active dry yeast
– 1/2 cup warm milk (110°F)
– 1/4 cup melted butter
– 2 large eggs
– 1/2 teaspoon salt
– Oil for frying

**For the Creme Brulee Filling:**
– 1 cup heavy cream
– 1 cup whole milk
– 1 vanilla bean, split and seeds scraped (or 1 teaspoon vanilla extract)
– 5 large egg yolks
– 1/2 cup granulated sugar
– 1/4 cup cornstarch

**For the Brulee Topping:**
– 1/2 cup granulated sugar

Instructions:

 

**1. Prepare the Donuts:**
1. In a small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until frothy.
2. In a large mixing bowl, combine the flour, granulated sugar, and salt.
3. Add the yeast mixture, melted butter, and eggs to the flour mixture. Mix until a dough forms.
4. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
5. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
6. Punch down the dough and roll it out to about 1/2 inch thickness.
7. Use a donut cutter to cut out the donuts and place them on a floured surface. Let them rise for another 30 minutes.

**2. Prepare the Creme Brulee Filling:**
1. In a saucepan, heat the heavy cream, milk, and vanilla bean (or extract) until it just begins to simmer. Remove from heat and let it steep for 10 minutes.
2. In a separate bowl, whisk together the egg yolks, granulated sugar, and cornstarch until smooth.
3. Slowly pour the hot cream mixture into the egg mixture, whisking constantly.
4. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens.
5. Remove from heat, strain through a fine mesh sieve, and let it cool.

**3. Fry the Donuts:**
1. Heat oil in a deep fryer or large pot to 350°F (175°C).
2. Fry the donuts in batches until golden brown, about 1-2 minutes per side.
3. Remove with a slotted spoon and drain on paper towels.

**4. Fill the Donuts:**
1. Once the donuts are cool, use a pastry bag to fill them with the creme brulee filling.

**5. Brulee Topping:**
1. Sprinkle the tops of the filled donuts with granulated sugar.
2. Use a kitchen torch to caramelize the sugar until it forms a crisp topping.
