Stuffed Meat Rolls
Ingredients:
– 1.5 pounds beef flank steak or thinly sliced beef
– 1 large onion, thinly sliced
– 2 cloves garlic, minced
– 1 cup mozzarella cheese, shredded
– 1 cup spinach, chopped
– 1 cup mushrooms, sliced
– 1 cup beef broth
– 1/2 cup dry red wine (optional, can be replaced with more beef broth)
– 2 tablespoons olive oil
– 2 tablespoons tomato paste
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– Salt and pepper to taste

1. **Prepare the Filling:**
– In a skillet, heat 1 tablespoon of olive oil over medium heat.
– Add the onions and cook until they are soft and translucent.
– Add the garlic, mushrooms, and spinach. Cook until the mushrooms are tender and the spinach is wilted.
– Season with salt and pepper to taste. Remove from heat and let it cool slightly.
– Mix the cooked vegetables with the shredded mozzarella cheese.
2. **Prepare the Beef Rolls:**
– Lay the beef slices flat on a clean surface. If using flank steak, cut it into smaller, manageable pieces and pound it thin with a meat mallet.
– Spoon the filling mixture onto each beef slice and roll them up tightly. Secure with toothpicks.
3. **Brown the Beef Rolls:**
– In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat.
– Add the beef rolls and cook until they are browned on all sides. Remove from the skillet and set aside.
4. **Make the Sauce:**
– In the same skillet, add the tomato paste and cook for 1 minute.
– Pour in the beef broth and red wine (if using), stirring to combine.
– Add the dried thyme, dried rosemary, salt, and pepper. Bring the mixture to a simmer.
5. **Cook the Beef Rolls:**
– Return the beef rolls to the skillet, spooning some of the sauce over them.
– Cover and let them simmer for about 25-30 minutes, or until the beef is tender and cooked through.
